Answer: The magnets are very strong, not sure exactly how you plan on using them but they are strong enough to hold fabric together for doing a hem in my opinion. -

Answer: The 300-series stainless steels have varying degrees of nickel making them mostly non-magnetic. Devoid of nickel and with a grain structure similar to carbon steel, the 400-series stainless steels are slightly magnetic. -

Answer: All magnets should be slid apart. Any other method may/will potently damage the magnet or ancillary attachments. These directions come directly from magnet manufactures. -

Answer: These magnets are very strong and would work. The only thing I would caution you about with them is they are fragile. -

Answer: Without knowing the weight of the knifes, I cannot tell you. I can say that these magnets are very powerful. be sure if you get them you keep them away from items such as DVDs.
